
Spicy Roasted Cauliflower & Chickpea Tacos with Mango Salsa
We know that eating whole, minimally processed foods are good for both you and the planet. No impact is too small — challenge yourself to eat even just one plant-based meal a week. Ingredients
- 10 corn or flour tortillas
- 4 cups chopped cauliflower (~1 small head)
- 1 cup cooked chickpeas (if using canned, be sure to drain and rinse them)
- 3 tbsp extra virgin olive oil or avocado oil
- 2 Tbsp Tahini (this gives extra crunch to the chickpeas for sure!)
- 2-3 tsp Fajita seasoning (depending on your taste
- Zest of 1 lime
- Pinch of sea salt and black pepper to taste
Mango Salsa
- 1 mango, peeled and diced (or approximately 1 C frozen mango, thawed)
- 1-3 Tbps Poco Picante Salsa mix depending on desired spiciness
- Juice of 1 lime
- 3 tbsp fresh cilantro, chopped (optional)
- Sea salt and black pepper to taste
Instructions
- Preheat oven to 425 degrees F and line baking sheet with bake & roll.
- Combine cauliflower and chickpeas in a large bowl. In a smaller bowl, combine olive oil, fajita seasoning, Tahini, lime zest, salt and pepper. Whisk to combine. Pour over cauliflower and chickpeas and toss to evenly distribute.
- Spread mixture evenly onto baking sheet (try to avoid crowding) and roast for 30 minutes, tossing once halfway through.
- In the meantime, prepare salsa by combining all ingredients in a large bowl. Refrigerate until ready to use.
- To prepare tacos, toast tortillas on heated skillet (optional). Fill with cauliflower and chickpeas, top with ~2-3 tbsp of mango salsa and additional toppings if desired: cabbage slaw, extra cilantro, lime juice and yogurt. We had them with guacamole (of course we did! My 7 year old wouldn’t have it any other way!), caramelized onions / mushrooms / peppers and a chipotle lime coleslaw along with the mango salsa, yogourt and shredded cheese!
